BARBECUED BABY FISH WITH GINGER, CHILLI & LIME

Serves 1 – 2

Ingredients

  • 1-2 long red or yellow chillies
  • 2 garlic cloves
  • 1 tbsp grated fresh ginger
  • 3 tbsp olive oil
  • 1 tspn sesame oil
  • 1 tbsp Asian fish sauce
  • a good slurp of honey
  • grated rind & juice of 2 limes
  • 1 heaped tbsp chopped fresh coriander
  • olive oil spray
  • 1 whole baby fish

Method

  • Finely chop together the chillies, garlic and ginger. Then whisk with the olive and sesame oils, fish sauce, honey, lime zest and juice, and coriander in a large bowl. Taste for seasoning.
  • Spray a large square of foil with oil, place the fish in the centre and smear the sauce over the top. Then tightly wrap up and cook for 10-12 mins on a preheated ridged grill or BBQ, checking if ready by making a small cut just below the head.
  • Carefully transfer the fish to a plate with the juices sprinkled on top and serve with steamed rice on the side.
